鮨を握るのに、早くとも10年くらい修行して初めて客の前で立たせてもらえるようなイメージをもっていました。
ところが初音鮨は違います。
ご主人が握るのと同じネタ、同じシャリ、同じ貫数を早ければ、1年目から店で立たせてもらいます。
若手には握る回数やお客様との感覚を早く習得してもらうために、お昼は3回転、夜は2回転、驚くのはこれに、2つのカウンターがあるので、若手が否応なしに修行できる環境を作ったご主人の考え方に共感せざるを得ません。
また、修行3年目となるとミラノにある初音鮨でもイタリア人相手に握らせてもらえる経験もさせてもらいます。
このことを初音鮨で聞くと、如何に日本の老舗の鮨店が若手を古いしきたりで育てていることがわかります。
値段は、1年目から2年目が14貫握ってくれるコースが6600円、3年目以上がに握ってくれるコースが8800円。
何度も言いますが同じネタ、同じシャリ、を使っています。
今回が3年目が握ってくれました。
これが3年目と思えないくらいの安定した握りでした。
また握るだけではなく、それぞれのネタごとに下処理の処理が実に科学的なご主人の考え方により進行されているのも実に見事な教育です。
年内(2025年)の予約はほぼ埋まってしまいました。
来年、必ず訪れたい都内の鮨屋です。
