三井寺駅から徒歩3分にある鰻屋。
3日前にお誘いされ貸切会に参加させて頂きました。
◯肝焼き
◯鰻の白焼き
大将が独自に開発した焼き方「己蒸しエアリー」
鰻を生きたまま皮をロール状にして焼き上げ、鰻が口を紡ぎ縁側が締まる事で己蒸しの状態になります。
鰻は生きているので中が真空になる前に口を開け、縁側を焼きながら切り取る事により内部に炭化熱を含んだ空気が取り込まれます。
この手法によってとりこまれた空気により、他とは全く異なるフンワリ感、正にエアリー状態です。
この白焼きは唯一無二。
う嵐さんでしか味わう事ができません。
◯鰻の蒲焼
蒲焼の焼き方についても詳しく説明されていましたが、忘失してしまいました。
蒲焼の焼き加減も絶妙で身はふっくらしてタレも美味しい。
蒲焼と一緒に、ご飯、お吸い物、山椒、生玉子が提供されました。
山椒は和歌山しみずのぶどう山椒。
香りがフルーティーで辛味は強いが何故か心地よい。
大将の鰻に対する拘りは凄まじく、その熱い想いがひしひしと伝わってきました。
今まで食べてきた鰻とは異なるものでした。
特に白焼き己蒸しエアリーを実践できるのは高橋大将だけでしょう。
別格というか別次元の鰻に感動しかありません。
