多分ここで食べる料理の多くが、他の店ではめったに味わうことができない代物。
まず出てくるアミューズが3種類。オリーブ、海苔、海藻を使ったもの。木のスプーンにチョコレートでコーティングされたものがあるが、口に入れて瞬間、薄いチョコレートが壊れ、なんだろうか、中からフレッシュな出汁というか、フレッシュなスープのようなものが出てくる。
次いで魚のシャルキュトリの原木。マグロやブリなどの魚が長いものは1ヵ月ほどかけて、ドライエイジングされてできた魚の生ハムの原木が披露される。
この日のシャルキトリは、マグロ、ぶり、カラスミ、それとみそだしを使った一品。
味噌出しとは雑魚をペーストにして作られたもの。本来は、流通から外れた魚を使って作られている。
ブリには、粒、マスタードと梅のジャム、マグロには、赤玉ねぎのマリネ、カラスミには大根、みそだしにはカレーが載せられている。
全てがスペシャリティ。
既にこの時点で、この店がただ者ではないことを思い知らされる。
その後も、海の幸のおいしさを、様々な形で引き立てる料理が、これでもか、これでもかと出てくる。
料理が多すぎて、全部説明する事は不可能。
とにかく、最初から最後まで驚かされっぱなしの3時間だった。
