乃木坂駅から歩くこと15分ほど。素敵な雰囲気の路地にあるビル。エレベーターで4Fへ。洗練されたモダンな空間で20:30から一斉スタートのコースをいただきました。

カウンター越しに眺める大将の包丁さばきは圧巻で、ついつい魅入ってしまいました。こちらでいただいた1品ずつ、どれもひと手間が加えられており、他のお店では味わうことのできないこだわりをひしひしを感じました。
印象に残ったものをいくつか感想とともに挙げていきます。
白子の冷製スープは臭みが全くなくトロッとクリーミーな舌触り。1品目としてこちらが提供され、いただきながらとてもワクワクしました。
茶碗蒸しはあえて具材をいれず、貝出汁そのものを楽しめるようになっています。提供された瞬間の香りから感動。
縞海老は贅沢に2尾。甘くて濃厚で、ぷりっとしているのに口の中でとろけてしまい、今まで食べたどの海老の中でも1番。とろけて消えてしまった儚さに名残惜しさを感じました、笑
中トロは50本もの包丁を入れているそう。なんとも繊細な包丁捌きと芸術的な見た目。口溶けがここまで変わるのかと驚き、思わず友人と顔を見合わせてしまいました。
雲丹は雲丹箱のまま豪快にカットし、こーんな厚みの雲丹食べた事ない…口を大きく開けて頬張り、うちいっぱいに広がるもすっととろけてしまう繊細な後味。余韻がなんともいえぬ幸福感でした。これはぜひみなさんに味わっていただきたい、、贅沢。
〆の不知火のパンナコッタ。個人的に柑橘系の中で不知火が甘みと苦味と酸味のバランスが好きで、パンナコッタって重く感じてしまうことも多いのですが、柑橘系なのと不知火の上品な甘さと苦味が相まってか、さっぱりと締めることができました。
個人的な好きな日本酒の楽器正宗を注文したら、たまたま大将もお好きな日本酒だったようで。会話に一花咲きました。楽器正宗は飲みやすく、辛口好きには向かないとは思いますが、料理の邪魔をせず、余韻を引き立ててくれるように感じるのでおすすめの日本酒の一つです。
1つ1つの感動が高く、退店した時には美術館を1周見て回ったような満足感と疲労感。お世話になった人や大切な人を連れて行きたい、紹介したいと感じるお店でした。
