an omakase that harmonizes Japanese seasonality

I tried their omakase course this time✍️
From Sekogani with Matsutake,
to Uni × Caviar × Truffle,
each dish is thoughtfully crafted with a sense of “purposeful pairing”
between ingredients.
The first half features refined and delicate small dishes,
while the latter half brings creations rich in aroma and depth.
Precise control of heat, aging, and fragrance creates
a lingering finish that stays with you long after the meal
