「柊家旅館」や「室町和久傳」で総料理長を

キツネのお面に象った紙と厄除け効果のある
松の葉を添えて。

お出汁の入ったお椀に後から唐墨餅を入れて提供
されたので、お餅はカリカリ熱々のまま。
唐墨餅をお雑煮のようにいただいたのは初めて。
◾︎「 ヤイトカツオ 辛味大根 茗荷 」
◾︎「 河豚 肝ぽんず 」
氷を球状にした雪まろげの中から河豚の刺身が
それぞれ小包されている。
皮の部分はごま油で味付けされていて
これまた新しい!

ミディアムレアめに焼かれた伊勢海老に
山椒オイルという独創的な一品!
これがまたクセになるあじ!
★「 白子 柚子 天ぷら 」
衣には長芋と柚子、中には白子。
新しい口福に驚いた。

魚と合わせない蕪のみで仕上げたかぶら蒸し!
魚がない方が私も好き。
