木村拓哉さんのグランメゾン東京を一気見しながらミシュランガイドの評価基準を思い浮かべていました。
「Quality of ingredients: 素材の質」「Cooking skill: 料理技術の高さ」はなんとなくわかるとして、「Taste: 味付けの完成度」は旨いかどうかだもんなぁ。
麻布かどわきさんは「Originality: 独創性」「Consistency: 常に安定した料理全体の一貫性」はっきりわかりますね。
独創性ならばヒラメの刺身で白菜と浅葱を巻いて、鮟肝を載せて佐賀県三福海苔で包んで頂く一品。食べ方は、曰く北京ダックの要領とのことで、お手本に門脇さんが巻いて手渡ししていだだきました。鮟肝は何かの辛味が和えてあり旨味もつよい。The Originality。
海苔はまさに逸品。そのお皿も海苔にあわせて作家に依頼されたとか。流石です。
素材、味付けならば忘れられないのが雲丹とキャビアの素麺。蟹の旨さを堪能したあと、それを凌駕する一皿。
するするっと、完璧な美味しさでした。
トリュフご飯の釜も、焼場の竃もコンロカバーも作風の統一性に何気に迫力を感じます。異国のインスペクターにも伝わったんでしょうか ^ - ^。門脇さん、器のお話をされるときとっても楽しそう。
デザートはリコッタチーズにラ•フランス、イチゴ、ここにもトリュフが散りばめてある。流れとしてConstancy感じられます。お土産にトリュフご飯ともみ海苔を頂いてあとを引く幸福感。
