平日の夜18時の訪問で、店内ほぼ満席。
客の年齢層は比較的高めで、落ち着いた雰囲気。
日本酒メニューが充実していました。
最初の一品目が、なんと北海道の中トロ。赤酢を使用した赤シャリが鮪の脂とマッチし、ネタの甘みや旨味が引き立ち実に美味。
二品目の平目は米酢のシャリ。シャリの塩梅を尋ねられ申し分ない事を伝えましたが、シャリの使い分け等も含めて店側のシャリへの思いが伝わってきました。
個人的に、鮨の好みはシャリに左右される所が大きいのですが、加さんのシャリは米粒が立っており、程良い粘度で舌触りが良く、酢加減も絶妙で自分好みでした。
次に、勝浦の鰹と、佐島のタコが提供。
鰹は目の前でジュッと備長炭により焼き目がつけられ、食欲をそそる炭の香りが辺りに立ち込めました。鰹特有の生臭みは全くなく、香ばしさと共に口内でとろけていきました。
身がプリプリのタコは塩で。
次なる蒸し鮑の肝和えは、鮑をいただいた後にシャリを投入し、肝をまぶして食するという個性的な一品。
白和えで口中をさっぱりさせた後、シャリにウニとイクラをふんだんに乗せた小丼が登場。目の前でパフェのように盛り付けられていく様を見るのが楽しく、味も文句なしの美味しさ。
次の銀鱈の塩焼きと、玉ねぎ醤油が添えられた大分県のイサキは、先ほどの備長炭が再び大活躍。皮が良い塩梅にパリッと焼かれ香ばしくなり、皮と身の間の旨味が引き出され、備長炭の効果を実感しました。
夏野菜の酢の物やガリで口内を整え、ついに本丸の握りが登場。最も印象に残ったのはフカフカの穴子。まるでムースのようにシュワっととろけていく食感は感動的でした。
握りの合間に茶碗蒸しを挟み、ラストは椀、巻き物、デザートプリンのような玉で締めくくり。
巻き物は、職人さんから巻きたてを手渡しで受け取るユニークな演出。
美味しいだけでなくパフォーマンス性もあり、あっという間の充実した2時間でしたが、藤沢駅南口からすぐという立地も考えると12,000円は実にお値打ち。
職人の皆さんは親切で感じが良く、卓上には手拭きが2種準備され、お手洗いにも立派なおしぼりが設置されるなど、端々にホスピタリティの高さも感じました。間違いなく再訪確定です。
