火と香りの設計に一貫した哲学を感じる一夜。
「炭火で素材を語る」ことをここまで構築的に表現できる店は、東京でも稀だと思う。
初手のフォアグラ黒糖まんじゅうから、デセールのキャラメルブリュレまで、
すべての皿が“メイラード反応”をテーマに繋がり、香ばしさと甘味のグラデーションで物語を描く。
シェフが操る火の距離感と温度のコントロールは、ほぼ職人芸の域。
特に印象深いのは、牛タンの椀物。
和の「吸い物」にフレンチのフォアグラを潜ませ、
一口で出汁の透明感と脂の旨味が重なり合う。
火を通すことで生まれる香ばしさと、内包された温度の緩急が見事。
肉料理は和牛と鹿を炭で焼き分ける構成。
和牛は外皮が軽く焦げ、中心はわずかにとろける温度帯、
脂の甘みが舌の上で溶けながら、炭の苦みがフィニッシュを締める。
鹿肉は赤ワインソースで野性味を纏い、柔らかくも芯のある噛み応え。
全体の流れが“香りの変奏曲”として成立しており、
日本的な節度とフレンチ的な熱量が、同じ皿の中で共存している。
ワインペアリングも非常に的確で、
前半のリースリングから中盤のコンドリューへの繋ぎが美しかった。
季節が変わるたびに再訪したい。
「火入れ」という行為をここまで叙情的に描けるのは、Metisならでは。
