よろにくが世に出だ後では,焼肉業界はすっかり変わったという。それからはよろにく以前,以後というらしい。どんな世界でも新しいスタンダードを作ることは偉大なことで尊敬に価する。さて何がそれほど凄いのか?焼肉はそれほど食べないので,焼肉通の評価を見たほうが良いが,私なりに焼肉の概念が変わった。関係ない話だが,昔代々木のイルペンティートに行ってピッツァの概念が変わり,私の中ではペンティート以前,以後ができたようなものだ。コースでシャトーブリアンが出るのも凄いが,何より焼き方にこだわる姿勢に共感が持てる。焼き手のプロのスタッフが1人専用でついて焼いてくれる。かつて肉を焼くのは男の仕事だ,と言ってトングを離さなかった愚かな自分が恥ずかしい。火加減の絶妙なコントールはMLBのピッチャーでも真似はできないだろう。
バラ肉の時は,肉に火がついて燃えて焦げないように叩きつけながら焼く。シャトーブリアンは,火がついているのかというような弱火で何十分とかけて焼く。その際はスタッフは部屋から出て行ってしまいこちらが不安になる程だ。絶妙に焼かれた肉が美味くないはずはない。焼肉屋で最後まで網を変えずに焼くところなど知らない。それが凄技の証拠だろう。聞くところでは,有名人,上級国民の場合はオーナーが自ら焼くらしい。上級国民に憧れもつらみも無いが,このサービスには少しヤク。
焼肉好きは,このスタンダードを知ってようやくスタートに立てると思う。
