天然真鯛の冷製カッペリーニや
フォアグラのブリオッシュなどの定番の皿も美味しいが、
じゃがいもと桃のビシソワーズや
鮎のコンフィや大蛤のマッシュルーム燻製バター焼きのように
旬の皿も
ヒグマのローストのような巡り合せの幸運の食材の皿も
負けず劣らず完成度が高い。
そういう店は本当に貴重だと思う。

<プロフ>
イタリア本国のミシュランの星付きレストランで修行を重ねた
濱口昌大シェフの隠れ家イタリアン。
店名はフランス語でsel(セル)、スペイン語でsal(サル)、
イタリア語でsale(サーレ)と3カ国の”塩”という言葉を繋いだ造語。
店名通り、塩使いにこだわった料理が頂ける。
2017年5月に三軒茶屋より恵比寿に移転Open。
