2017.7.16昼 「日本橋蛎殻町 すぎた」にて昼席。
この日もアテンドは「寿しの吉乃」大将・吉田さん、私とソラノイロ店主・宮崎さんの計3名で。
実はひそかにずっと憧れていた店。
2007年、1stアルバムのツアーに出るため、当時勤めていた会社を退職、年収は前年比で半減したが毎週末に日本のどこかでライブをするという、苦しくも刺激的な日々の中、何故か書店で手に取った「日本一江戸前鮨がわかる本」を迷わず購入。
その中で紹介されていたのが、当時「日本橋橘町 都寿司」だった頃の杉田氏。
そんなに年は変わらないのに(たぶん5コ上)、錚々たる面々と並び紹介されている事に、素人ながら強く興味を持ち。
ツアー後、ライターに転職し、勉強のためにと購入した
・自遊人 2008年7月号『「すし」のいろは。』
・食楽 2010年1月号『寿司通になりたい!』
・自遊人 2011年5月号『すしの未来』
と悉く登場する杉田氏を見て、勝手に「いつかこの人の鮨を食いたい」と思うようになっていた。
そんな思いが去来するようになって早10年、ついに念願の場へ。
感想を一言では言い表し難いが、ざっくりまとめると全てにおいて「しっくりくる」とでも言おうか。
供される品はもちろん、所作、会話、テンポと、比喩ではなく本当に「全て」。
それも、凄みを効かせるような圧迫感がなく、リラックスできる空気感の中で。
何から何まで心地良い、あっという間の2時間半だった。
前置きがムダに長くなったが、以下当日の内容と簡単な感想。
【つまみ】
◇枝豆(ビール飲みたかった)
◇蛸と鮎魚女(どちらも身の質感がバツグン)
◇蒸し鮑(脳髄がとろけて出そうな美味しさ)
◇鰯の酢締め(味はもちろん、巻きの美しさに心酔)
◇鮟肝の煮付け かずのこの味噌漬け 鮑の肝の味噌漬け(酒をオーダーしなかった事を激しく後悔)
◇真魚鰹の幽庵焼き(ホロリと儚い身の口ほどけ)
【握り】
■シンコ(握りの美しさに惚れ惚れ)
■コハダ(旨みの引き上げ方に感服)
■イサキ(まさに旬!な気品ある味)
■真鯛(身の熟れ加減が絶妙過ぎ)
■青箭魚(淡白ながらほのかな甘み)
■春子鯛(皮の柔らかさに驚愕)
■鮪 中トロ 噴火湾(赤身と脂のバランス良好)
■鯵(薬味不要なモノと仕事の素晴らしさ)
■金目鯛(豪華絢爛な味わいに歓喜)
■車海老(温度も火入れ加減も最高)
■赤雲丹 壱岐(間違いがなさ過ぎる美味さ)
■穴子 ツメ 金沢八景(煮上がりを思わせるふわふわ具合)
■蛤の椀(臓腑にしみじみ染み渡る)
■玉(上質なチーズケーキのよう)
