下北沢の街角で,半世紀以上ふっと呼吸を続けている「珉亭」.
この日は『もやしそば』を注文しました.
もやしの細い線が幾重にも重なり,スープを震わせる.
豚肉は控えめに散り,木耳は黒のアクセントとして沈み,どれも主張しすぎないのに全体の輪郭を締めてくれる.
スープは澄み切った醤油清湯.
透明度は,油に逃げず,旨味だけで立ち上げようとする古典の矜持そのもの.
ひと口すすれば,醤油と動物系のエネルギーが,もやしの水分と干渉し合い,味の勾配がゆっくり変化する.
麺を引き上げた瞬間の湯気がいい.
細めのストレート麺が,もやしの余熱をまといながら細く揺れる.
“麺と具材が並列に存在する”というより,“同じ密度の世界に溶け合う”という感覚.
その混ざり方が,まさに珉亭の料理哲学だと感じました.
もやしそばという単純な一品に,時間と街の記憶のレイヤーが重なり,妙に忘れられない一杯になる.
下北沢に残された数少ない老舗で味わうそれは,丼の中で静かに反芻する時間でした.
