本町のオフィス街に,静かに緊張をまとった一杯を出す「中華蕎麦 葛」.
昼の雑踏をほんのわずか断ち切るような店構えで,香りと質感を極限まで研ぎ澄ませた“出汁の表現”を提示していました.
この日は『出し蕎麦』を注文しました.
運ばれてきた瞬間に,丼を覆う“微細泡”の層が目に刺さる.
液面はほとんど揺れず,出汁の旨味を空気に分散させながら,淡い乳白の膜が均一に広がっている.
表面張力すら演算されたかのようなスープのたたずまい——これはラーメンでありながら,別種の液体芸術だと感じました.
中央には,瑞々しい青ねぎが輪郭を立て,その下に低温調理のチャーシューが静かに沈む.
薄桃色の肉は,咀嚼の直前にわずかな抵抗だけを残し,出汁の熱で輪郭がとろけていく.
麺を持ち上げた瞬間,泡が薄くまとわりつき,麺線の間で淡い光が反射する.
その光沢だけで,スープの粒度と密度が伝わってくる.
ひと口すすれば,雑味のない旨味が舌の中央にだけ集中的に落ち,そこから静かに周縁へ広がる.
塩味の輪郭は驚くほど潔く,素材の出汁だけで構造体を形成しているような味覚曲線.
ラーメンというより,出汁のポテンシャルを飲む行為そのものに近い.
“淡い”のに“弱くない”,その矛盾めいたバランスがこの店の核だと思う.
食べ終わる頃には,身体の内側に静かな余熱だけが残る.
記憶に深く刻まれた一杯でした.
