南船場の裏通りで,ひときわ静かな異物感を放つ「鶏Soba 座銀 にぼし店」.
扉を開けた瞬間から,この店の“にぼし”は伝統ではなく概念だと悟る.
構造としてのスープ,物質としてのトッピングが,どれも不要な説明を排して迫ってくる.
今回いただいた『にぼし吟醸nigori』は,にぼしを乳化の極限まで追い込んだ“にごり”の世界.
表層に浮かぶ微細な油滴は光を乱反射し,粘度の高さが視覚だけで伝わってくる.
レンゲを沈めれば,とろみの抵抗が手に返り,まるでスープそのものが呼吸しているかのような質量感を持つ.
これは出汁ではなく“抽出の彫刻”だと感じた.
象徴的なのは,器から立ち上がるように配置された牛蒡チップ.
細長く,ひねりを帯び,熱と乾燥の軌跡がそのまま形になったような存在.
にぼしの濃度と衝突しながら,香りの軸を縦に伸ばしていく.
まさに,常識に回収される前の“食のオブジェクト”.
中央には水菜,白ねぎ,紫玉ねぎが控えめに浮かび,濃度の森にわずかな通気口をつくる.
そのまわりを,しっとり低温調理のチャーシューが円弧を描いて包む.
味よりもまず“質感の緩急”で語ってくる構成.
そして別皿の肉寿司.
噛む前からすでに“情報量が過剰”で,肉の甘みが舌でほどけていく.
座銀の一杯は,旨味を足し算で固めるのではなく,食材それぞれの“存在の仕方”をずらしながら,どこまで料理を構築しうるかという実験に近いと感じました.
境界線を越えた濃度と,彫刻的な配置がもたらす新しいラーメン体験.
良い意味で期待を裏切るような一杯に出会ってしまった.
